More Recipes

Thanks to Pinterest I feel like a cooking machine!!  My friend Sarah says that's what I am!!  :-)  I like to cook but I think now that I'm in this new apartment, I have a little more room in the kitchen so cooking is more fun.  Plus Pinterest has provided some great ideas!!!  I'm trying to think of what recipes I've tried lately that I could tell you about.  I've made cheeseburger flat breads, breakfast muffins, cheesy chicken & rice...hmmm...maybe those are the only new ones.  But let me tell you about them!!!  Cause they were good and easy!!

I just made the Cheeseburger Flat Breads yesterday.  Yummy!
Cheeseburger Flat Breads
Ingredients:
*1 can of pizza crust
*1lb ground beef (or whatever you prefer)
*cheese (I used shredded but sliced would work too)
*onion (enough for your liking)
**I also added green, red and yellow peppers...but you don't have to

Directions:
*In a medium sized skillet, put 2 tablespoons of oil and let that heat up.  In another skillet, start to brown your hamburger.  Season as you normally would.
*While your hamburger is browning, roll out your pizza crust and flatten in out some.  Then cut it into 6 rectangles.  (Pinterest suggested shaping it into circles.  I left mine in squares.)
*Place 2 of your rectangles into the skillet with the oil.  Cook on each side for about a minute or less.  You don't want them too brown but you want them a little bit brown! 
*I added the onions and peppers to my hamburger as it was browning.  Adds to the taste.
*Once your hamburger and flat breads are done, just put your hamburger mixture down the middle of the flat bread and put your cheese on top so that it melts some.  I added ketchup for taste.  Then folded it and ate it!  So good and easy!  And the flat breads are delicious!  I will say though that they're not as good warmed up.  But not bad.

Breakfast Muffins
Ingredients
*Bread (I piece for every muffin you plan to make...I used 12)
*Bacon pieces (cooked)
*Shredded cheese
*Onions
*Green peppers
*Eggs (approximately 6 for 12 muffins)
*Sausage crumbles

Directions:
Cut approximately 3 inch circles out of each piece of bread.  I'm sure a cookie cutter would come in handy but I didn't have one so I just cut around the top of something.  It works!  Line your muffin pan with BUTTER cooking spray.  Place each piece of bread in the muffin pan.  In a bowl, mix your eggs, salt, pepper, cheese,  onions, peppers and sausage crumbles.  Then spoon about 1 tablespoon of the mixture into each bread muffin.  Put your bacon on top.  Then top with a little more of your egg mixture.  Place in the oven at 350 for about 10 minutes.  Take out, put some more cheese on top and bake for about another 5 minutes.  Delicious and easy breakfast!!! 

Cheese Chicken and Rice
**The original recipe called for cooking the chicken in the crock pot but that can take anywhere from 3 to 7 hours.  So I used chicken breast I already had cooked!**
Ingredients:
*1-2 medium sized chicken breasts (cut up)
*1 can Cream of Chicken
*1 box Yellow Rice
*1 can drained corn
*2 cups of shredded cheese
*onion (cut up...for taste so however much you'd like)


Directions:
Grill or bake your chicken breast.  Cut up into about approximately 1 inch cubes.  Place that in the bottom of your crock pot along with the onions and cream of chicken.  Cook that on low while you cook your rice.  That takes about 25 minutes.  Once your rice is done, place that in the crock pot along with the can of drained corn and bag of cheese.  Mix it all together really well and cook on high for about another 30 minutes til it's all warm all the way through.  It's delicious!!!

I wish I had took better pictures of all of this stuff but I didn't.  Maybe next time I make it, I will.  Tonight is just chicken 'n noodles.  Nothing special but delicious!!!  My plan is to try to make these Taco Cupcakes this week.  I'll have to let you know how that goes!!!

New Year, New Me

New year, new me. Who says that? Ok, a lot of people so no offense if you’re one of them.  But I like me. Sure, I’m not perfect. But I don’t want to really change all of me.  So no silly quote like that for me! It is hard to believe that 2019 is here. The older I get, the quicker time flies by.  I do remember being told that when I was a teenager.  Those people were so right.  It feels like yesterday that I was sitting in my quiet house while Johanna was off with friends celebrating the start of 2018.  But that was a year ago.  Today, I’m still sitting in my quiet house but that’s because Karyna is just waking up for the day.   A few years ago, I used to work on videos that would highlight my year.  I loved doing them but they took time.  And that’s time that I don’t have as much of these days.  It’s hard to go through a year of pictures and videos.  Do you know how many pictures I take a year?  My goodness!...

Friday Follow

How come when it's time to do the Friday Follow, I have nothing interesting to say??? Hmmmm...it's been a long week.  Days where things just didn't make sense.  Lots I need to process.  It's possible that all of my thinking will lead to a great post this weekend.  But for now, I just hope all of you new visitors find something interesting to read from other posts here.  I plan to spend this rainy weekend doing some thinking, relaxing, watching movies and checking out new blogs!  Sounds like a good way to spend the weekend, right?  :-)  Thanks for stopping by!

New Cards!!!

So between resting this weekend (cause my allergies kicked my butt...especially yesterday), I worked on making some cards.  It's been SO long since I've actually spent time doing something like this and I LOVE making cards!  So I wanted to share them with you.  I made 20 cards total.  2 each of 10 designs.  So now there's two sets of friendship cards.  I think I'm going to try to sell one set.  Then I think give the other set away.  I'm just not sure how.  Any ideas?  I'm thinking if you leave a comment about the cards you'll be entered to win.  If you buy one set of cards, you'll also be entered to win.  Hows that sound?
