I love Taste of Home magazine!! And I found this easy recipe in there last night. I love mexican food so I had to try these chicken enchiladas. I tried them tonight and they were sooooooooooo good!!! So I want to share the recipe with all of you! (Again, I'm not taking credit for this recipe. I got it out of a Taste of Home magazine.)

- 1 small onion, chopped
- 2 tsp oil
- 3 cups shredded cooked chicken breasts (I used cubed)
- 1 can (14.5oz) no-salt-added diced tomatoes, drained
- 1 tub (10 oz) Philadelphia Sante Fe Blend Cooking Creme, divided
- 1/2 cup Mexican Style Finely Shredded 4 Blend Cheese
- 8 flour tortillas
- Heat oven to 350
- Cook and stir onions in hot oil in large skillet on medium heat 4 to 5 min or until crisp-tender. Stir in chicken, tomatoes, 3/4 cup cooking creme and shredded cheese (I used a little more than the 1/2 cup).
- Spoon about 1/3 cup chicken mixture down center of each tortilla; roll up. Place seam-sides down in 13x9 inch baking dish sprayed with cooking spray; top with remaining cooking cream. (I also added a little more onions to the top.)
- Bake 15 to 20 min or until heated through. (I baked mine 15 min and then added a little more cheese to the top. Then baked another 5 minutes.)
