Some More Recipes...I'm on a Roll

Man!  Pinterest has turned me into some kind of cook!  I've always liked to cook but this is really crazy for me.  But I made 3 different recipes today that I want to share with you.  I'll save my favorite for last!

I do want to give credit where credit is due.  I got the first recipe from Pinterest and the blog The Girl Who Ate Everything.  So click on the link to get the recipe.  I didn't make any changes this one and it was delicious!



Next up is Cheesecake Stuffed Strawberries...which I renamed Reserve Strawberry Cheesecake!  It's cause I'm a dork really!  Again, I found it on Pinterest and you can find it at The Sweets Life.  I cheated on this one some.  It was already easy but I decided I wanted to make it easier!  I bought the cheesecake filling already made and the Graham cracker crumbs are from a box!  Still delicious and cute!  So if you want to make the filling from scratch, hop on over to the blog I got this from.  If you want to cheat, just stay right here!

Directions:
*Wash your strawberries
*Cut off the top and then take out some of the insides (it's easy)
*Put a few spoonfuls of filling inside and zip-lock baggy.  Seal it tight then cut a small hole at the end of the bag to make it easier to get the filling inside of the strawberries.
*Fill your strawberries.
*Sprinkle the graham crackers on top.
*Refrigerate til serving.

**The only thing I would have done differently is adding some sugar to the strawberries themselves.  Cause there is a small bite you may take that doesn't have cheesecake in it that has that sour taste.  So I think next time, that's what I'd do a little different.**

OK.  Now on to my favorite recipe of the night!  Taco Cupcakes!!!!  Check out Just Us and the Many Miles Traveled to get her recipe on these.  I changed it some so you may want to compare both so you can decide which you like best and what you'd like to change up. 

Here is what you will need:

1 lb 95% lean ground beef
1 T taco seasoning
24 wonton wrappers (found in the produce section)

5 T + 1t of queso dip or salsa con queso

1 c chunky salsa

1 c reduced fat shredded Mexican cheese

Sour Cream

First, pre-heat the oven to 375. Lightly mist 12 cups in a muffin tin with cooking spray and set aside.


Brown your ground beef in a skillet and cook according to your taco seasoning directions.  While you're doing that, push a wonton wrapper into each of your cups in the muffin tin.  It's easy!  I promise!

Then spoon a teaspoon of queso dip in each wrapper and spread.  I will say that I didn't measure this.  I just took it out of the jar, put it in the botton and spread it.  Seemed easier that way!

Then put your taco meet.  Don't put a ton.  Since there will be another layer, you don't want to over pack it.  Then spoon out a teaspoon of your salsa.  Again, I didn't measure.  Seemed like just an extra step I didn't really need. 

Next put a pinch of cheese on top.  Then you're going to do it all over again!  Wonton wrapper, queso, meat, salsa and cheese.  I put a little more in the 2nd layer cause I could see how much room I had left over.  This is what it should kind of look like before going into the oven.



Then cook for about 18 minutes.  And they should come out looking something like this!!!

Then I added some sour cream before eating! 


There were SO good!!!!  I can't even explain to you how good they were!  They are definitely my favorite recipe so far.  Give them a try!  I think you'll be impressed no matter which recipe you go by!!
My plan at some point this week is just to write a normal blog.  Update you on some things.  But I will warn you...I have at least one more new recipe I plan to to try this week!!!

New Year, New Me

New year, new me. Who says that? Ok, a lot of people so no offense if you’re one of them.  But I like me. Sure, I’m not perfect. But I don’t want to really change all of me.  So no silly quote like that for me! It is hard to believe that 2019 is here. The older I get, the quicker time flies by.  I do remember being told that when I was a teenager.  Those people were so right.  It feels like yesterday that I was sitting in my quiet house while Johanna was off with friends celebrating the start of 2018.  But that was a year ago.  Today, I’m still sitting in my quiet house but that’s because Karyna is just waking up for the day.   A few years ago, I used to work on videos that would highlight my year.  I loved doing them but they took time.  And that’s time that I don’t have as much of these days.  It’s hard to go through a year of pictures and videos.  Do you know how many pictures I take a year?  My goodness!...

Friday Follow

How come when it's time to do the Friday Follow, I have nothing interesting to say??? Hmmmm...it's been a long week.  Days where things just didn't make sense.  Lots I need to process.  It's possible that all of my thinking will lead to a great post this weekend.  But for now, I just hope all of you new visitors find something interesting to read from other posts here.  I plan to spend this rainy weekend doing some thinking, relaxing, watching movies and checking out new blogs!  Sounds like a good way to spend the weekend, right?  :-)  Thanks for stopping by!

New Cards!!!

So between resting this weekend (cause my allergies kicked my butt...especially yesterday), I worked on making some cards.  It's been SO long since I've actually spent time doing something like this and I LOVE making cards!  So I wanted to share them with you.  I made 20 cards total.  2 each of 10 designs.  So now there's two sets of friendship cards.  I think I'm going to try to sell one set.  Then I think give the other set away.  I'm just not sure how.  Any ideas?  I'm thinking if you leave a comment about the cards you'll be entered to win.  If you buy one set of cards, you'll also be entered to win.  Hows that sound?
